Asparagus Margarita

I bet you've never heard of asparagus in a marg...but trust us when we say this recipe is mindblowing delicious!

Many of you are probably thinking “asparagus, really?” and I’ll have to explain why we chose this flavor pairing…

Sotol is a traditional Mexican spirit that comes from a desert succulent that is purported to be from the asparagus family (depending on your source this is debatable), so I wanted to see how they’d work together. The answer is magnificently.

This “marg” has all those fresh vegetal notes you want plus bright citrus and a pleasing herbal background.

Trust us, if you’re even halfway adventurous, you need to make this cocktail. It’s badass.

ASPARAGUS MARGARITA 1 oz Sotol 1 oz Tequila Blanco .25 oz Green Chartreuse 1 oz Asparagus Juice* .75 oz Fresh Lime .75 oz Agave 6-8 drops Maldon Salt Solution* DIRECTIONS: Shake all ingredients with ice until well-chilled. Strain over one large rock in a double old fashioned glass and garnish with blanched asparagus. *Asparagus Juice: In a blender, add 10 stalks of fresh asparagus, cut into 1" pieces. Add 1/4 cup of filtered water and blend on high until you have a smooth consistency. Add more water if necessary. Strain through a super bag or a fine strainer and bottle. Will last in refrigerator for three days. *Maldon Salt Solution:
