Tarragon Whiskey Sour

TARRAGON WHISKEY SOUR
2 oz Uncle Nearest 1856
1 oz Lemon Juice
1 oz Tarragon Syrup**
1 Egg White
3 Dashes Orange Bitters
Add all ingredients to a shaker filled with ice and shake until well-chilled.
Strain out all ingredients, dump the ice and shake again, in a circular motion for 20 seconds to whip the egg white into a foam.
Pour over a few new ice cubes in a chilled Old Fashioned Glass and garnish with a sprig of Tarragon.
**Tarragon Syrup
Remove the leaves of 4-6 sprigs of Tarragon.
Heat 1 cup of Demerara sugar and 1 cup of filtered water and stir until sugar dissolves.
Once sugar is dissolved, add tarragon, remove pot from heat and cover.
Let steep for a few hours or overnight.
Strain syrup and store in a mason jar or airtight container. Will last 1 week refrigerated.
