Rose Colored Glasses
We created this special recipe for an engagement party this weekend for a client who is all about beautiful garnishes.
We love the way the specks of the fresh vanilla bean shine through the aquafaba to make the perfect bed for the rosebuds. In case you never heard of it, aquafaba (chickpea water) is a vegan substitute for egg white that adds body and foam to cocktails. It may sound strange but it works well and doesn’t add any weird flavor elements. It’s simply there for body.
ROSE COLORED GLASSES
1.5 oz Vodka
.5 oz Koval Rose Hip Liqueur
.5 oz Fresh Lemon
.75 oz Vanilla Rose Syrup*
.5 oz Aquafaba
DIRECTIONS: Shake all ingredients with ice until well-chilled. Double strain into chilled martini or coupe glass. Garnish with three food-grade dried rosebuds.
*Vanilla Rose Syrup:
1.5 cups Sugar
1.5 cups Filtered Water
1 tsp Dried Rosebuds
1 tablespoon Organic Pitaya Powder
3 Grade A Madagascar Vanilla Beans (split down the middle)
Directions: Heat water and sugar and stir until dissolved. Add vanilla bean, pitaya powder, and rosebuds and simmer for 10 min. Turn off heat. Let it steep for 24 hours in airtight container. Strain bottle and date. Will last about 2 weeks in the fridge.
PRO-TIP: Organic Pitaya Powder is a great ingredient to bump up the color without using anything artificial.
