Under The Volcano
Inspired by our love for espresso, mezcal and heat, we created this curious cocktail to appease all three. An espresso martini to rule them all!
UNDER THE VOLCANO
1.5 oz Kimo Sabe Mezcal Joven
1.5 oz Espresso or Cold Brew Coffee
1 oz Chocolate Habanero Syrup*
.75 oz Amaro Lucano
.25 oz Dry Curaçao
3 dash Bitters Lab Cedar Bitters
DIRECTIONS: Combine all ingredients into your shaking tins. Shake with ice until well chilled and serve in a chilled coupe or martini glass. Garnish with a dehydrated orange wheel.
*CHOCOLATE HABANERO SYRUP
2 whole chocolate habañero peppers, sliced (If you can’t find this special variety, regular habeneros work too or for a milder version, use jalapenos)
1 cup cacao nibs
1 cup water
1 cup raw sugar
DIRECTIONS: Bring all ingredients to a boil. Reduce heat to low and let simmer for 15 minutes. Strain into mason jar or squeeze bottle. Store for up to 3 weeks.
