Peach In The Palenque

Mezcal lovers, this one's a real dream. Inspired by Trade St. Jam, we get a little peach, a little smoke and a little kick...

This recipe was inspired by our two Brooklyn friends, Trade Street Jam Company and Hella Bitters! The Trade Street team was kind enough to send us a couple jars of their jam to experiment with some Jamtails, and as soon as we saw the Smoked Yellow Peach, our minds immediately went to Mezcal! So we whipped up this delicious smoky number with a kick. Try out this recipe and let us know what you think!

PEACH IN THE PALENQUE 

DIRECTIONS: 

  • Shake all ingredients with ice until well chilled and strain over large cube in rocks glass.

  • Garnish Lime wheel.

*Rich Jalepeño Syrup:

  • bring 1 cup Turbinado or Demerara sugar to boil with 1/2 cup filtered water until sugar is dissolved.

  • Add 1 whole Jalepeño, sliced, and reduce to a simmer for 3 minutes.

  • Remove from heat, steep for 20 minutes, strain and bottle.

  • Good for 2 weeks refrigerated.
